Alfredo Stuffed Bell Peppers

This recipe was so random by me combining things that sounded good to me one night… BUT it turned out to be so good so I had to share it with you all!

Ingredients

  • 3 Bell Peppers (I use yellow, orange & red)
  • 1 package Near East Roasted Red Pepper & Basil Quinoa & Brown Rice Mix
  • 1 jar Classico Light Creamy Alfredo Sauce
  • 1 lb Ground Turkey
  • Olive Oil
  • 1 Tsp Tajin Clasico Seasoning (with Lime)
  • 1 Tsp Pepper
  • 2 tsp Minced Garlic
  • Colby Jack Shredded Cheese

Instructions

  1. Boil water in large pot. Wash and cut bell peppers in half (cleaning out the inside). Boil them for about 6 minutes.

  2. Cook the ground turkey with 2 tsp Minced Garlic and pepper. 

  3. Cook the Roasted Red Pepper & Basil Quinoa in a separate pan. (The olive oil is for this).

  4. Once the turkey meat is done, add the Alfredo sauce then the quinoa. Mix well together. Add Tajin seasoning to your liking! Mix again.

  5. Stuff each pepper with the ground turkey/quinoa mixture. Top with colby jack shredded cheese. Bake at 350 degrees for about 10 minutes. All done!
