So to be honest I threw this recipe together! I knew that I wanted chicken, but I didn’t want what I call “plain chicken”. We all know what that means I’m sure! Its like throwing chicken in a pan with whatever seasonings you have to have a fast and healthy meal! I do that often, but last night I wanted to change things up. So I thought, why not get some Italian Panko Bread Crumbs and some Parmesan Cheese and come up with something! I did that with some other ingredients and baked it, and it turned out to be so yummy!

I put Homemade Veggie Cauliflower Rice and Baked Zucchini chips with this! Below is the Baked Parmesan Chicken recipe and after that is the Homemade Veggie Cauliflower and Baked Zucchini chips recipe.

Baked Parmesan Chicken

This easy Baked Chicken dish made plain chicken to yummy chicken in only 30 minutes!

Ingredients

  • 1 bag Shredded Parmesan Cheese
  • 1 cup Italian Panko Bread Crumbs
  • 1 Egg
  • 2 Tbsp. 2% Milk
  • 1 Tsp. Minced Garlic
  • Salt & Pepper
  • Weber Roasted Garlic & Herb Seasonings
  • 1 Tbsp. Butter I use Brummel & Brown Buttery Spread made with Yogurt
  • 1 Boneless Skinless Thin Sliced Chicken Breasts

Instructions

  1. Preheat the oven to 450 degrees. 

  2. In one bowl, melt 1 Tbsp. of Butter. Then add the Egg, 1 Tsp. Minced Garlic, 2 Tbsp. 2% Milk, Pepper to your liking, and a little bit of Roasted and Herb seasonings.  

  3. In another bowl, mix 1/2 cup of Italian Panko Bread Crumbs and 1/2 cup of Shredded Parmesan Cheese. 

  4. Get a baking pan and spray with Non-Sticking Coconut Oil Spray. Dip each chicken breasts in the Egg Mixture then into the Bread Crumb/Cheese mixture. Place Chicken on the pan. Top with some Roasted Garlic & Herb Seasonings, a little bit of salt and pepper, and Parmesan Cheese. 

  5. Bake the Chicken at 450 Degrees for 25 minutes or until the Chicken is done. If you get the thin-less slice breasts it doesn't take as long to cook! πŸ™‚ Enjoy! 

 

Veggie & Cheesy Cauliflower Rice

Veggie & Cheesy Cauliflower Rice

This Homemade Veggie & Cheesy Cauliflower Rice is healthy, easy, FAST and so yummy! I made this as a "Side Dish" with my Baked Parmesan Chicken.

Ingredients

  • 1 Tbsp Olive Oil
  • 1 Bag Frozen Riced Cauliflower I get Birds Eye Steamfresh
  • 1 Bag Frozen Riced Cauliflower Savory Herb I get Birds Eye Steamfresh
  • 1 Bag Frozen Mixed Veggies
  • 1 Jalapeno
  • 1/2 Tsp. Cayenne Pepper
  • 1/2 Tsp. Minced Garlic
  • Salt and Pepper to your liking
  • 1.5 cup Shredded Colby Jack Cheese

Instructions

  1. Microwave each bag of Riced Cauliflower and Mixed Veggies.

  2. Heat skillet with 1 Tbsp. of Olive Oil and 1/2 Tsp. of Minced Garlic. Add chopped Jalapeno and cook for about 2 minutes. 

  3. Add Riced Cauliflower and Mixed Veggies. Stir well. 

  4. Season with cayenne pepper, salt and pepper to your liking. (Leave out cayenne pepper and jalapeno if you do not like spicy).

  5. Add the cheese and melt! Enjoy! πŸ™‚ 

Recipe Notes

Leave out the Jalapeno and Cayenne Pepper if you don't like a little spice! It is still yummy with the garlic, salt, pepper and cheese. Baked Zucchini Chips

Baked Zucchini Chips

I like to call these "Baked Zucchini Chips" because you can make them like chips! They are SO easy, healthy and yummy!! I made this as a "Side Dish" with my Baked Parmesan Chicken.

Ingredients

  • 4 Zucchini
  • 2 Tbsp. Olive Oil
  • Salt, Pepper and Garlic Powder to your tasting

Instructions

  1. Slice the Zucchini into thin round circles. 

  2. In a big bowl, mix with Olive Oil. Spray cookie sheet with Non-Stick spray.

  3. Lay each Zucchini down flat on the pan and season with salt, pepper and garlic powder to your tasting.

  4. Bake at 450 degrees for about 15-20 minutes or until done. I like mine to have a little crunch to them so cook to your liking! πŸ™‚
