I know it has been awhile since I have posted a food blog post or much of any post. I have been trying to get back to a “new normal” since my mom passed away, which hasn’t been easy but I know that she would want me to continue doing what I really enjoy to do, so I am excited to get back to food blogging and sharing my recipes with you all again. My mom always cooked and loved to cook, so I get it after her. 🙂

I made Buffalo Chicken two ways! You can have it as Buffalo Chicken Zucchini Boats, or Buffalo Chicken Stuffed Shells. Both are yummy! This is not that spicy. The cream cheese evens the buffalo sauce out, but it does have a little kick to it but NOT much at all! This is coming from a person that doesn’t really like spicy things. Here is the recipe!

Buffalo Chicken Zucchini Boats & Stuffed Shells

Tasty, a little bit of spice but savory Buffalo Chicken Zucchini Boats and Stuffed Shells.

Ingredients

  • 1 lb Ground Chicken
  • 4 oz 1/3 Less Fat Cream Cheese
  • 1.5 cups Mozzarella Cheese
  • 2 tsp Minced Garlic
  • 2 Zucchini
  • Jumbo Shells
  • 1/3 cup Sweet Baby Ray’s Buffalo Wing Sauce
  • Course Black Pepper to your liking
  • 1 Package Mushrooms (Optional for side)

Instructions

  1. Ingredients! 

  2. Cook 1lb Ground Chicken with 2 tsp Minced Garlic. 

  3. While ground chicken is cooking, wash zucchini, cut in half, scoop out the seeds to make the zucchini hollow to stuff, then bake at 400 degrees for 10 minutes. Boil water and cook jumbo shells.

  4. Once ground chicken is cooked, add 4oz light cream cheese, 1/3 cup buffalo sauce, and 1/3 cup of water. Mix well.

  5. After mixing! 

  6. Take the zucchini boats out of the oven and drain the water from the shells. Stuff the zucchini boats and shells with the buffalo chicken mixture. 

  7. Top zucchini boats and shells with mozzarella cheese. Optional -Mix 1 TBSP buffalo sauce with a little bit of water to pour inside of the pasta shells before adding cheese to help retain moisture. 

  8. Put in oven at 400 degrees for 5 minutes or until cheese is melted. Enjoy!! Buffalo Chicken Zucchini Boats finished!
