Being on the go so much and trying to eat healthy, I got tired of just grabbing a granola bar that made me hungry an hour later and it is not that nutritional. So I got inspired and tried to make Egg Frittatas “my way”. I was so surprised with how they turned out. All you have to do is cook them on a Sunday afternoon (about 45 minutes of your time), and then heat one up for 50 seconds in the microwave in the morning, and boom you are ready to run out the door with a healthy, long lasting, breakfast!

  • Also don’t be afraid to add in your vegetable of choice, rather it be chopped broccoli, mushrooms, or asparagus! Spinach is just something that I had so I used it and it was yummy.

I did half a batch of turkey egg frittatas with 6 egg whites/6 regular eggs, and half a batch of 8 regular eggs, ham egg frittatas.

Time: 15-20 minutes

EGG FRITTATA- BASIC INGREDIENTS (for both Turkey and Ham)

  • 20 Eggs
  • Bag of spinach. (12 handfuls of Spinach)
  • 1 tbsp. olive oil
  • Yellow pepper
  • Orange pepper
  • Turkey (whatever kind you like, I used Hillshire Farm Honey Roasted)
  • Ham (I used smoked ham from the deli)
  • 2 slices Pepper jack cheese (1 slice cut up for Turkey batch, 1 for Ham batch)
  • 2 slices cheddar cheese (1 slice cut up for Turkey batch, 1 for Ham batch)
  • 1 cup of Quaker Quick Oats
  • Salt and pepper
  • Cinnamon
  • Garlic powder
  • Onion powder
  • Chili powder (if you want it to be a little spicy)

SEASONINGS

  • Pam Spray
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 2 tsp. pepper
  • 2 tsp. garlic powder
  • 1 tsp. onion powder
EGG FRITTATAS FOR TURKEY:

– 6 whole eggs
– 6 egg whites Ham
– Turkey
– 1 slice of pepper jack cheese diced
– 1 slice of cheddar cheese diced
– 6 handfuls of spinach
– Half of yellow & orange pepper
– 1/2 cup of Oats
– 1 tsp. cinnamon
– Dash of salt
– 1 tsp. pepper
– 1 tsp. garlic powder
– Dash of onion powder

EGG FRITTATAS FOR HAM:

– 8 whole eggs
– Ham
– 1 slice of pepper jack cheese diced
– 1 slice of cheddar cheese diced
– 6 handfuls of spinach
– Other half of yellow pepper
– Other half of orange pepper
– 1/2 cup of Oats
– 1 tsp. cinnamon
– Dash of salt
– 1 tsp. pepper
– 1 tsp. garlic powder
– Dash of onion powder

DIRECTIONS— 5 Steps YAY!

Step 1: Preheat oven to 400 degrees.

Step 2: Cut up 2 pieces of pepper jack cheese and 2 pieces of cheddar cheese into little squares. Cut up 3 pieces of turkey and ham into squares. Set aside.Cut both bell peppers seeds out and dice them. Sauté yellow and orange pepper in olive oil. Once soft, remove the peppers and put them in a bowl. Add 12 handfuls of spinach from the same pan you cooked the peppers in, let it cook till it is wilted.

Step 3: Once the spinach has wilted, turn off the stove and prepare 2 different big mixing bowls.

Step 4: In one of the mixing bowls make the TURKEY batch. Put 6 regular eggs in the bowl, then 6 eggs without the yolk. Scramble with a whisk, then add turkey. Add 1 piece of pepper jack cheese and 1 piece of cheddar cheese that are diced up into squares. Stir well. Add the cinnamon, salt, pepper, garlic powder, and onion powder. Stir well. Add HALF of the sautéed vegetables from the stove, including half of the wilted spinach. Stir well. Add ½ cup of the Oats. Stir well.

In the other mixing bowl make the HAM batch. 8 regular eggs. Scramble with whisk, add ham, 1 piece of pepper jack, 1 piece of cheddar cheese cut into squares. Stir well. Add the cinnamon, salt, pepper, garlic powder, and onion powder. Stir well. Add the other HALF of the sautéed vegetable mix from the stove, including the other half of the wilted spinach. Stir. Add ½ cup of the Oats. Stir well.

Step 5: Coat the muffin pan with PAM. Then pour your turkey batch in one muffin pan, and your ham batch in the other muffin pan. Add some shredded cheese if preferred. BAKE for 15-20 minutes at 400 Degrees. Check periodically. To check if they are done put a toothpick through the middle of one, if it comes out clean they are ready! Don’t want to cook them too long or else they will be dry. Enjoy! 🙂
