Lately, I have been wanting to venture out and try new things so here we are with these easy Fish Tacos and my own Chipotle Lime Crema (not mayo based because I don’t like mayo)! I get nervous about making tacos with fish because of how you cook the fish, but this time they turned out so YUMMY! I actually made them in my awesome Instant Pot and it only took 7 minutes to cook! FASTEST dinner ever! But, no worries if you don’t have an Instant Pot, you can bake the fish with the same amount of ingredients in the oven for about 12-15 minutes! 🙂

Instructions

Fish Tacos

  1. Preheat Instant Pot by selecting MEAT then manual to when it says “15”. **If you DON’T have an instant pot bake at 400 degrees for 12-15 minutes or until flaky. Pour 1 cup of water in bottom of instant pot, leave the lid off, wait till it starts to boil. Prepare the raw cod by patting it dry with a paper towel and putting it in a foil “bowl”, seasoning it with 1/4 Tsp Salt, 1/2 Tsp Pepper, 1 Tsp Chili Powder, 1/4 Tsp Cumin, 1/4 Tsp Chipotle Chili Powder, 1 Tsp Garlic Powder, Paprika and dash of cayenne powder if wanted. After seasoning put 1 Tbsp of olive oil in foil packet.

  2. Once the instant pot water is boiling, put the foil “bowl” on top of the rack in the instant pot- leave the foil open a little bit so that it can breathe. Close the instant pot, cook for 7 minutes then vent.

  3. Put the cooked cod in a bowl and add a little bit of the juice from the foil packet in the bowl. Prepare to serve!

Chipotle Lime Crema

  1. Mix 1/2 cup sour cream, 2 Tbsp Fresh Lime juice, 1/3 cup chopped Cilantro, 1/2 tsp Garlic Powder, 1/4 tsp Chipotle Chili Powder in a bowl. Mix well! Add a dash of cayenne pepper if you want more spice. Serve on top of fish tacos. Top tacos with coleslaw, avocado slice, tomato and a dash of cheese if wanted!

  2. Serve on top of fish tacos!

Enjoy!
