Taco Tuesday… or Tasty Tuesday for a Healthy Mexican dish!? I’ll take either one! I am always trying to find new ways to “spice” chicken up… because we all know that chicken can get boring sometimes! This Healthy, Low-Carb Mexican Chicken Dish satisfied my Mexican craving and I was craving the leftovers the next day!

Healthy Mexican Chicken

  • 1 lb Chicken Breast Tenderloins
  • 4 slices Pepper Jack Cheese
  • 1/4 cup Shredded Colby Jack Cheese
  • 1 can Whole Kernal Corn (Organic) Drain some of the juice
  • 1 can Black Beans (Organic) – drain and rinse
  • 1 can Rotel No Salt Added (Drain some of the juice)
  • 1 can Mild Green Chiles
  • 1/4 cup Cilantro
  • 1 Tbsp Olive Oil
  • 1 Tbsp Garlic Powder
  • 1 Tsp Cumin Powder
  • 1 Tbsp Chili Powder
  • Sprinkle of Salt & Pepper over chicken
  • Light Sour Cream (Served with it on top if wanted)


  1. Ingredients! (Add a little Shredded Colby Jack Cheese)

  2. Preheat oven to 400 Degrees. Spray baking dish with non-sticking spray. Put the chicken breast tenderloins in the dish. Sprinkle lightly with salt, then pepper, add the 1 Tbsp Garlic Powder, 1 Tsp Cumin Powder and 1 Tbsp Chili Powder over the chicken evenly. Top each tenderloin with Pepper Jack Cheese. 

  3. Put the black beans (drained & rinsed), Green Chiles, Corn, Rotel (drain some juice but not all), 1/4 cup chopped cilantro in a bowl then Mix it together! 

  4. Put the bean mixture over the chicken evenly. 

  5. Add Pepper Jack and shredded Colby Jack cheese over the chicken. Sprinkle with a little bit of chili powder. Bake for 25-27 minutes on 400 Degrees. Check the chicken to make sure it is done (depending on the thickness of the tenderloin). 

  6. All done! 

  7. I topped it with a little bit of cilantro and sour cream. Enjoy!! Comment below if you tried this and liked it!
