If you know me, you know that I am a sauce girl. Sauces make everything better! I finally have mastered the perfect spicy but semi-sweet sauce that I call “honey chipotle” sauce. This sauce is great mixed in with shrimp, chicken or pork! I decided to make my recipe as Honey Chipotle Shrimp Tacos for a taco night! It turned out so good, so I wanted to share it with you all! It was definitely a hit and something that I will be adding to my recipe book! Time: 30 Minutes
Servings: 4

Ingredients: 

    • Medium size Raw Shrimp (1 lb.)
    • Tri-color Claw Slaw
    • Soft taco tortillas
    • Fresh Cilantro
    • Olive Oil
    • Ketchup
    • Distilled White Vinegar
    • Soy Sauce (less sodium)
    • Honey
    • Minced Garlic
    • Garlic Powder
    • Chili Powder
    • Chipotle Chili Pepper
    • Lime juice

Honey Chipotle Sauce Ingredients (included on the full list of ingredients):

  • 1/4 cup Ketchup
  • 1/3 cup Honey
  • 1 Tbsp. White Vinegar
  • 2 tsp. Chipotle Chili Powder
  • Pinch of salt
  • 1 Tbsp. Soy Sauce
  • 1 tsp. Minced Garlic

Directions: 

Thaw half of the bag of Raw Frozen Shrimp over cold water. While thawing shrimp, prepare an iron skillet with a dash of olive oil over medium heat (you can use a regular skillet if you don’t have an iron skillet). After the skillet is heated, add the shrimp. Sprinkle chili powder and garlic powder over the shrimp. I had to do several batches of cooking the shrimp due to having a small iron skillet.

 

While the shrimp is cooking, its time to get saucy! Prepare a sauce pan and add these ingredients to it:

  • 1/4 cup Ketchup
  • 1/3 cup Honey
  • 1 Tbsp. White Vinegar
  • 2 tsp. Chipotle Chili Powder
  • Pinch of salt
  • 1 Tbsp. Soy Sauce
  • 1 tsp. Minced Garlic

Cook the sauce over low-medium heat until it is sauce-ready! In the mean time, put all of the cooked shrimp into a pan, then poor the sauce over the shrimp. Cook on low heat for 5 minutes to let it marinate a little bit.

After this, prepare to make your Honey Chipotle Shrimp Tacos! I put sour cream, honey chipotle shrimp, tri-color claw slaw, a little bit of shredded cheese, a little bit of lime juice, topped with cilantro! Yum!

Cheesy Black Beans- Mexican side dish

 

Okay, so to be honest I threw together this side and did not think it would be that great. Black beans can be bland, but I decided to give it a try and they turned out to delicious. This Mexican side dish is also SO simple!

Time: 20 minutes

Servings: 4

Ingredients: 

  • 1 can Organic Black Beans (rinsed and drained)
  • 1 can Mild Rotel (drain the juices)
  • Shredded Mexican Cheese bland
  • Fresh cilantro
  • 1 tsp. Cayenne Pepper

Directions:

Cook the black beans. After the black beans are cooked, rinse and drain them. Add the rotel (drained) and a dash of cayenne pepper. Then, grab a baking dish! Put the black beans/rotel in the baking dish. Add fresh cilantro, top with Mexican blend shredded cheese and more cilantro! Bake for about 10 minutes or until cheese is melted. After this, the Cheesy Black Beans are ready to be served!

 

All done! Easy, but yummy dinner! Enjoy! 🙂
