Ever just stare at a blank page trying to get yourself to write but you just can’t seem to get words out or do it. That has been me with this for these past 5 months. I can’t even keep count of how many times I have came back to this same draft… started writing things, cried, deleted it all, cried, wrote again, cried, deleted again, now to just start on a white blank page again. This has been really hard to write about, but I’m sharing a personal story with you all. One so close to my heart. By no means am I a good writer, but here it goes.
I hope to help others with remembering to have FAITH, HOPE and TRUST during REALLY hard times. During times when you feel so numb. To continue to have Faith and Trust, not just Faith and Trust, but Faith and Trust in our awesome God. He can do big things. During this time of feeling so lost, helpless, heartbroken and scared I gave it ALL to God. I knew that he is in control. He has shown me his presence, his strength for me to be strong when I didn’t think I could hold myself up and the guidance as my mom goes through the hardest thing in life that anyone could go through. He has protected us, he gave my mom the strength when she could barely walk, and he continues to give her strength to fight this cancer. She has improved and I feel forever grateful, thankful and blessed to have such an amazing God and such a strong mom that loves so hard. Thank you God for everything and for giving my mom the strength to fight this aggressive cancer. I pray you watch over her and she can get through this.

This cupcakes are so YUMMY! If you are a fan of cookie dough you will love these! I actually got the cupcake recipe from a friend (Lisa B.), but then I made my own homemade light icing to top them with! 🙂 These would be perfect for Valentine’s Day, parties of any sort or any events! Everyone will be wanting this EASY recipe! My sister asks me every year to make these for her birthday!!

Chocolate Cookie Dough Cupcakes
Try these tasty chocolate cupcakes with cookie dough in the middle!! Don’t worry- the cookie dough is cooked in with the cupcakes. Top it with my homemade, light icing!
- 1 Box Pillsbury Devil’s Food Cupcake Mix
- Make sure to have all ingredients in the mix
- 1 Package 24ct Pillsbury Chocolate Chip Cookie Dough
- 1 Tub Cool Whip
- 1/2 Block 1/3 Less Fat Cream Cheese
- 1 Tsp. Vanilla Extract
- Cupcake Liners, Cupcake Pan, Mixer
- Sprinkles if you want
Preheat oven to the instructed degrees from the cupcake mix. Let the cool whip thaw out and the cream cheese soften while preparing the cupcakes.
Mix the cupcake mix together. Line the cupcake pan with cupcake liners.
Pour the cupcake mix into each liner- a little over half way full.
Put a piece of cookie dough in each cupcake. Gently press the cookie dough into the cupcake.
Bake at the degrees instructed on the cupcake mix box for the right amount of time. While that is baking, prepare the homemade light icing!
Soften half of the cream cheese block in the microwave for about 30 seconds. Mix a little over half of the tub of cool whip. Mix well with a mixer until smooth. Add 1 Tsp. of Vanilla Extract.
Take the cupcakes out of the oven and let them 100% cool before icing them.
Cut the cupcake in half and see the chocolate chip cookie dough! These are best when they are warm! Yum!!
Put icing on the cupcakes!
Add the icing & sprinkles on the other cupcakes!
Then set up the cupcakes for whatever you may have going on! 🙂

So, who doesn’t love homemade spaghetti every once in awhile!? You can now eat spaghetti that is low carb and with a lean meat! See my recipe below! 🙂 It is so simple and took about 45 minutes total!
Spaghetti Squash Spaghetti
Enjoy this easy, low-carb delicious dinner!
- 1 package Ground Turkey
- 1 Container Ragu Traditional Sauce
- 1/2 Diced Yellow Onion
- 2 Tsp Minced Garlic
- Salt & Pepper to your liking
- 1 Tsp Italian Seasoning
- Crushed Red Pepper Flakes (optional if you want a little spice)
- 1 Spaghetti Squash
- Shredded Parmesan Cheese
- 1 Tbsp Olive Oil
Push meat, then manual on your instant pot to get it preheated. Pour 1 cup in the instant pot, don’t put the lid on yet.
Wash the spaghetti squash, cut it in half (dig out the seeds), then put it in the instant pot. Put the lid on, cook for 15 minutes.
Saute 2 Tsp. Minced Garlic and 1/2 of the diced onion in about 1 Tbsp of olive oil. Once this is sautéed, add the ground turkey.
Add the Ragu sauce once meat is cooked. Add 1 Tsp. of Italian seasoning, pepper, and a little bit of crushed red pepper if you like a little spice! Put a lid on and let this cook/simmer.
Once the spaghetti squash is done, let the Instant Pot vent. To make the noodles, just use a fork to get it out. All done! Serve with the meat sauce!
I made green beans and garlic bread with this!

It has been so cold here! But, it has not been near as cold as Chicago and other areas. I can’t even imagine what it is like there right now. Prayers to the people affected by the storms and the cold! I saw on Good Morning America a guy and his dog get saved by being pulled up by a leash!! I am so glad that they are okay and I’ll be praying for everyone affected with the storms during this time.
With it being so cold, I wanted to share 5 things that would be great to do inside! I also wanted to share this AMAZINGLY soft pullover I bought! I saw it on Emily Gemma in white and it looked to comfy and soft to not buy! I was needing a pullover, so I decided to order it and I was so excited when it arrived. It is something you want to cuddle up in on the couch! I wear it while running errands or just around the house when it is cold. 🙂 It runs a little big, so I suggest sizing down a size! Get it below!

Are you wanting to live a healthier lifestyle, but your not sure where to start? Take small steps! Do you dread going on a diet? Or, have often splurges after a diet and feel bad about it? Well.. I know what you mean because I’ve been there! I’m not against a diet by any means (I think that they can be a great cleanse every once in awhile and I do them sometimes), but I think it is healthier to just live a “Healthy Lifestyle” all the time. You feel better about yourself and your body feels SO much better! You have more energy throughout the day and you don’t have a whole lot of sweet cravings.
Don’t get me wrong, I am not always the “healthiest” and I don’t always eat super healthy, but I just try to focus on having a balance and being healthy! I try to eat healthy most of the time just because it makes me feel good!
Focus more on trying to make healthier choices daily! Taking small steps can be a great way to improve your overall well-being. 🙂 Don’t get overwhelmed by the “big picture” of being healthier, just do what you can and make smarter choices daily to become a better YOU!
Don’t worry about what other people are doing or what other diets people are going on, just do what works for you and what you feel best doing! Everyone’s body is different, so just remember that. 🙂

So last night I made homemade Instant Pot Chicken Enchiladas and they were delicious and SO easy!! It took a total of 45 minutes and not that many dishes. That is a win for me! Instant Pot Chicken Enchiladas
This fast, easy and yummy Homemade Chicken Enchiladas will want your family wanting more! 🙂
- 4 tbsp Light Sour Cream
- 1 bag Fiesta Blend Shredded Cheese
- 1 can Natural Chicken Broth (33% less sodium)
- 1 can Old El Paso Green Chile Enchilada Sauce
- 1 package Frozen Bell Peppers & Onion Mix
- 1 lb Frozen Chicken Breast Tenderloins
- 1 package La Banderita Carb Counter Whole Wheat Tortillas
- Pepper & Garlic to your liking.
Here is a picture of all of the ingredients, just for reference!
Put Chicken broth in Instant Pot. Add 6 frozen chicken breast tenderloins. Add the package of bell peppers & onion. Add pepper and garlic powder. Lock the lid, Press Meat, then Manual then it will say “15” and it will preheat/begin to cook on its on!
Once it is done, take the chicken out and shred it. Drain the chicken broth from the peppers and onion.
In a skillet: Add the shredded chicken, peppers/onions, 4 Tbsp. Light Sour Cream, About 1/4 cup of Green Chile Enchilada sauce and stir. Add some shredded cheese (I used about 1/2 cup) after it is all mixed.
Put the chicken enchilada mixture into each tortilla into a baking dish. Top the enchiladas with green chile sauce and shredded cheese.
Top the enchiladas with green chile sauce and shredded cheese.
Bake at 400 degrees for 10 minutes or so! All done! Enjoy! 🙂
For serving, I added sour cream and cilantro on top!
