So… I am on a “Zoodle” (zucchini noodles) kick!! I LOVE them! It is so good and it takes away the carbs of eating pasta! Before I started making this, I thought it would be hard to make zucchini into noodles and it would take forever to cook them, but I was so wrong! It is simple, easy healthy and FAST! This meal took me only about 30 minutes total to prepare and make! Count me in on a quick and healthy meal!

The only bad part about this post is that I actually did not take pictures throughout the WHOLE thing like I normally always do. Shame on me! I didn’t take pictures because I thought that it was very simple and it may not be that great. I am wishing I did so that I could share my normal “step by step food post”, but instead this one is sweet and short with ingredients and instructions! Zucchini Noodles with Shrimp and Vodka Sauce

Try this 30 minute "Zu-ilicous" dinner! Healthy, easy, fast and low-carb!

Ingredients

  • 4 Zucchini
  • 1 bag Medium Frozen Shrimp
  • 1 Vodka Sauce (I use Classico-Walmart) I used about half of the jar.
  • 3 Tbsp. Olive Oil 1 Tbsp. for Asparagus, 1 Tbsp. for Zucchini Noodles, 1 Tbsp. Shrimp
  • 1 bunch Asparagus
  • Garlic Powder, Minced Garlic
  • Salt & Pepper
  • Zatarain's Blacken Seasoning
  • Lemon Juice For asparagus if you want!
  • Spiralizer

Instructions

  1. Thaw the shrimp by rinsing with cold water.

  2. Make zucchini noodles using a spiralizer. (I got one from Walmart for only $6)! 

  3. Start cooking the asparagus in a skillet with 1 tbsp. olive oil, minced garlic, salt & pepper to your liking, and a little bit of lemon juice. 

  4. Cook the Zoodles in a pan with a little bit of olive oil (Add more olive oil if needed if you have to make batches of zoodles), garlic powder and salt to your liking. You don't have to use a lot of olive oil because they don't need it! Also I only cook mine for about 5 minutes in the pan just so that they aren't soggy! 

  5. Pan sear the shrimp with a little bit of olive oil, garlic powder and blacken seasoning until done. I flip mine half way through cooking! Shrimp only takes about 2 minutes cooking on each side! 

  6. Warm up the vodka sauce in a pan! 

  7. Then, put your Zoodles on your plate, vodka sauce on top, then shrimp with asparagus on the side! This meal is so "Zu-ilicous"! Enjoy! 🙂
